Tastes Like Thanksgiving!

Good riddance 2020! This year is going to be different – no matter what is going on around me, I’m going to focus on “ME.” I will express self love every single day. On New Year’s Day, I dragged my husband off of the couch and we went for a bike ride. It was chilly out, but we still got some fresh air, sunshine & exercise. It felt amazing. The next day, I walked/jogged around the neighborhood for 45 minutes. I was so winded that I thought I might be sick. At the same time, I could feel the tension draining from my body – I nearly cried. My legs were very sore afterwards so I got out my yoga mat and stretched – ahhhhh – it felt sooooo good! Today, I took a Weight Watcher’s recipe – Turkey Tetrazzini and changed it up – lowering the smart points (SP) in the process. I didn’t want spaghetti. I had a craving for stuffing. I sprayed a 11×14 throw away tin with butter spray, combined 3 cups of diced turkey (0 SP on Purple) that we had leftover from New Year’s Day, and added one can of heart healthy cream of mushroom soup (14 SP) to the turkey, along with one cup of 30 calorie almond milk (1 SP), 4 tbs of grated cheese (4 SP) and S&P to taste. In a separate microwave safe bowl, I combined 1.5 cups hot water with a 6 ounce box of stuffing mix – didn’t add butter to it and I nuked it for 5 minutes. I spooned the stuffing mix across the top of the casserole and drizzled 2 tbs of lite butter (7 SP), which you don’t actually have to use – over the top and baked it at 350 for 30 minutes. A 1.5 cup serving equaled 5.5 SP. The entire dish is eight servings. It really tasted like Thanksgiving. For dessert, I have a crock pot full of chopped apples cooking. I added just a little bit of water, cinnamon and nutmeg – so it also smells like Apple Pie in the house! I will put a little whipped cream on top of the apples to make it extra special. I tracked everything I put in my mouth today – I’m not depriving myself – I’m loving myself! I hope you love yourself too – show yourself some LOVE – you deserve it!

  1. I love reading what you write. I was running a1 mile everyday for 3 weeks in the neighborhood until my knee started killing me. I’ve been resting it and bought myself $100 sneakers. I’m hoping I can continue to run the neighborhood in addition to my regular workout regimen. You are right..feels so good to run outside. Love the apple pie recipe…gonna try that one. Can’t wait to do dinner again!
